Ever since my daughter started eating solid foods and tried carrots, it has been one of her favorite foods. Now that she is one year old and eating table foods, I make sure our meals incorporate toddler-friendly, healthy foods for her to eat. Roasted vegetables are perfect side-dishes because they are easier to eat than raw vegetables, and in my opinion are tastier. This maple glazed carrots recipe is easy to make and quite tasty. I prefer to buy carrots and peel and chop them myself because I think the flavor is better, but baby carrots could serve as a good substitution and would make this recipe even easier if you are short on time.
To grill the carrots I use a cast iron pan. This is the first recipe I made using my new cast iron pan that my husband brought back home for me when he went to Germany earlier in the month. I was waaay too excited to use a cast iron pan, haha. It’s the little things in life that bring joy.
First, wash, peel, and chop your carrots. Or if you’re using baby carrots just wash them.
Next, mix the glaze ingredients in a bowl and stir in the chopped carrots until thoroughly coated. Preheat grill to 450F and preheat cast iron pan. Transfer coated carrots to cast iron pan and grill at 450F for about 45 minutes, or until the carrots are tender.
I forgot to preheat my cast iron pan when I made this for the first time and it changed my grill time by about 15 minutes. So make sure to preheat your pan! Also, I was losing daylight as I took pictures of the carrots and so the carrots are not completely roasted all the way in the pictures. You can tell when the carrots are done by how tender they are, if you’re not sure, just pierce with a fork to check. Serve the carrots immediately as a delicious, healthy side-dish. Hopefully your family will enjoy this recipe as much as mine. These pair nicely with Turkey Apple Burgers or Honey BBQ Grilled Chicken.
