This honey-garlic grilled chicken wings recipe is a new personal favorite. This is my second time doing the autoimmune protocol. If you’re not sure what the autoimmune protocol is, there’s loads of information out there on the internet. Basically, it is a strict eating regimen that helps your body clean out your gut, helping your autoimmune system to run properly.
The first time I did this protocol was a little less than two years ago right before getting pregnant with my second baby. I had noticed I was randomly gaining weight even though I was eating fairly healthy and working out and also felt completely exhausted. After getting a physical and going over my bloodwork with my doctor, I learned my thyroid levels were off leaning towards hypothyroidism. Anyways to make a long story short, I researched ways to help your body produce more of the thyroid hormone my body needed and stumbled across the autoimmune protocol (AIP). One month later, I headed to the doctor for more bloodwork and found out my thyroid levels had not only improved but were healthy! Fast forward to now with my chaotic life with two little kids and I’ve been feeling the same symptoms I did before… so I decided to do the protocol again to get back on track! I’m on week three and feeling great!
One of the biggest things I missed when doing this protocol was my favorite Smoked Buffalo Chicken Wings. So, I decided to create a chicken wings recipe to help me sustain the autoimmune protocol. It took me three tries to get this recipe right. At first I tried adding too many different spices and didn’t love the flavors. Next, I tried changing the spices but still didn’t like the outcome. The third time I made these, I decided to just keep the recipe simple sticking mostly to just honey and garlic to give the chicken wings flavor and it turned out so yummy! It was hard getting a picture of these wings because as soon as I pulled them off the grill my husband, two kids, and I were gobbling them up! I hope you enjoy these honey-garlic grilled chicken wings as much as we do!
First, mix your dry ingredients together in a bowl.
Next, toss your chicken in the dry rub and coat completely. Then place the chicken in a ziplock bag and refrigerate for at least two hours our up to 24 hours.
Preheat your grill to 450F. These wings will be grilled on indirect heat for a total of 45 minutes, but in two segments. First, grill for 30 minutes. During that time, make your glaze.
The glaze only takes 5-10 minutes to make. The longer it sits after you make it, the thicker it gets. After the first 30 minute grilling segment, coat your wings in the glaze, flip them, and coat them again and grill for about another 15 minutes.
After the 15 minute grilling segment, check the internal temperature of the honey-garlic grilled chicken wings with your meat thermometer. I like my chicken wings to be around 175-180F, although as long as they are 165F they are cooked enough according to the FDA guidelines.
Once the chicken wings reach the correct internal temperature, pull them off your kamado grill. If you can, allow the honey-garlic grilled chicken wings to rest 5-10 minutes before eating them; enjoy!
